1 tea bag MILFORD Funny Berry
50 g fine oatmeal
150 g flour
2 tsp baking powder
125 g brown sugar
80 ml plain vegetable oil
1 tsp grated organic lemon peel
1 medium sized red apple
2-3 tsp apple jelly or apricot jam for glazing
12 paper baking cups
Pout 150 ml hot water over a MILFORD Funny Berry tea bag,
Brew for 6 minutes, then remove the tea bag. Allow the tea to cool. Pour the oatmeal into the cold tea and leave to soak. Preheat an oven to 175°C (160°C convection heat). Mix the flour and baking powder. Stir together the egg, brown sugar, oil, lemon peel and tea-oatmeal mixture. Gently stir in the flour mixture. Place the paper baking cups into the hollow of a muffin tray and pour in the batter.
Rinse, dry and cut the apple into quarters, coring and cutting these into columns. Spread the apple slices over the dough. Bake in a pre-heated oven for 15-20 minutes until golden brown. Stir apple jelly until smooth and brush over the cupcakes.
